Situation is this,
I am planning a trip in August TO Raleigh Durham the cheapest option would be through Brussels or Copenhagen with a touch down in LHR.
Going out would be fine and I guess I would have an entry and exit stamp into Brussels however I would not have an exit from Brussels on my return.
The return flight land in LHR and before going to Brussels – I would only have hand luggage so no troubles there and would want to travel from LHR to EDI but my concern would be entry back into Schengen without exit stamp.
Hope that makes sense would love to know peoples thoughts
Why would you not have an exit stamp from Brussels? When you depart to LHR you will leave Schengen and be stamped out

Your post is a little confusing. I believe you are UK based and on the last leg you’ll be booked to Brussels but want to go to Edinburgh on a seperate ticket? So no worries about stamps here, you’d never go to Brussels. Check in online for your seperate LHR-EDI flight and follow signs for UK connections when you land from Raleigh-Durham and show them that boarding pass.
It is very important you don’t show the Brussels boarding pass at that point and connect as an international passenger, you need to clear UK immigration and have your biometrics captured to allow boarding to EDI. You can’t just switch to a domestic destination once inside the departures area of T5
