I have a quick TP run hop to Sofia booked for November, outbound Saturday, back Sunday. The Sunday return has been cancelled and amended to Monday, which doesn’t work for me. The Saturday remains as originally booked.
I am not precious which weekend I go, but I want to book for a different Saturday/Sunday combo.
Am I right that I can rebook any Saturday/Sunday I want, even though only the return was cancelled? First few agents have been unhelpful (although each has had a different reason why my preferred dates – actually this weekend – can’t be booked without paying £xxx in additional taxes)

Yes, I have tried every weekend combination for the next year and it says “there is no availability for selected days. Please change your date” although all have business availability available for purchase online.
My point is am I right that although only one leg has been cancelled, I can rebook the entire flight to dates of my choosing?

No, the cancellation of the return doesn’t entitle you to rebook the whole trip at no cost. That applies to certain situations only. BA is supposed to reroute you for the cancelled leg. They will reroute you on the Sunday via Bulgarian airlines then onto a BA flight.

Is there a reason it has to be Bulgarian airlines? I am looking into options to ensure the leg XXX>LHR is 80TP.
The best is to call BA and, with a couple of flight numbers at hand, ask to be changed to those.
UK261 is pretty clear that you should be rebooked to a flight “of your convenience”.
If you want to go outside of -3/+14 then you need the original selling class available e.g. I or R. The flights this weekend are showing as C / D so won’t be available to move to without a fare difference (assuming you booked something less expensive – if you don’t know then I believe you can see this on Qantas MMB or get your eticket from Finnair website – the first letter of the fare basis is the selling class)
BA won’t offer another airline except Iberia for a cancellation more than 24hrs in advance. They would pay for a hotel for you to stay an extra night. You could also try asking for IB2385 connecting in Madrid to BA463 but it’s actually a Bulgaria Air flight to Madrid with IB codeshare which they likely can’t / won’t do, but worth a go.
Otherwise as @yonasl says you’ve got the right to rebooked either at your convenience or at the earliest opportunity on your original schedule but that is going to require you to not refund the BA ticket, buy your own tickets and fight it out with BA likely via CEDR or MCOL
If you do travel then in theory should be OK for original routing credit to get your 80 TP but I’m not too familiar with that myself.

Because that’s what BA has been offering for the Sunday cancellations and then you have to ask for the ORC. BAH has confirmed to people they will fix the double TP but not sure for regular flights.
So I think I have decided that I can fly back on the Monday and work from Sofia the day of the Monday.
@JDB / those in the know – am I right that I can submit a claim to BA after the event for the cost of an extra night’s hotel (staying in the intercontinental)?Is it just a case of booking the extra night now and sending the receipt to BA after the event.

Yes, once you have returned claim for the extra hotel night and food; BA should pay without any fuss.

Is it best to book through IC direct and give that receipt, or could I eg book through Emyr for the credit etc?

It’s fine to book however you wish (and it’s the hotel invoice BA will be looking at anyway) but the price should be the same or reasonably comparable to that of the original nights you have booked.
