Can confirm it does work, purchased Macbook Air through Unidays for £999 on Friday, offer posted on Saturday.
Hi Connor, so I am interested in purchasing a MacBook as well and good news you got the offer. So, just to confirm that you got the offer credited purchasing directly through the Unidays website and not the link attached to the Amex offer and then applying a Unidays discount or promo offer. Thanks
Unidays website takes you through to the Apple website with the discounted educational prices. No Amex involvement apart from accepting the offer and paying with it.
Has anyone tried this through the Apple refurbished site, just bought an iPad and the transaction is showing Apple UK Kiosk?
Also brought macbook air and £80 worked.
Also brought £100 apple gift card at westfield that works with the £10 amex offer too.
also brought apple gift card via employer at 4% discount. Add all the gift cards into apple accout and made sure the balance for amex is at least £800 to trigger offer.

brought from main website my amex bill also showing apple uk Kiosk and got credit.
Last time this offer was on I bought Apple Gift cards to the amount, knowing that in September I would be getting the latest iphone as it would have USB-C. Takes a little bit of the sting out of the purchase, so worth bearing in mind if you know you are going to spend the money in the future.
