Hi,
I was wondering if you could help me with understanding the terms below.
My current assumption is that “In the situation where I have multiple cards with Amex UK, the policy that came with the Gold card is valid as long as I purchased something with one of my Amex cards, it doesn’t need to be the Gold card.”
Is that assumption correct?
“Account” or “Card Account” means Your American Express Credit Card account with American Express on
which the Preferred Rewards Gold Credit Card is issued“American Express” means American Express Services Europe Limited.
“Card” means any Card or other Account access device issued to a Cardmember (or a Supplementary
Cardmember) for the purpose of accessing the Account.“Cardmember” means any individual who holds a valid Account.

This is my assumption also but I’m just some random dude on the internet.
I think your assumptions are both incorrect.
The terms specify:- “All benefits are dependent on the use of the Card.” which when read with the preamble make it clear that it refers only to the PRG.
This is obviously different to some of the benefits of say the Amex Plat insurance which allow payment with another Amex or sometimes even non Amex, but the very specific and limited insurance offerings with the BAPP or PRG are exclusively through use of those cards.

I think I will assume that I will need to purchase on the card.
When does this protection for said bought item start?
For example on the front of my amex card says member since 2017

The refund/purchase protection is only valid for 90 days, so no!
