Singapore Airlines announces Monica Galetti as a London guest chef

Over the years, many airlines have partnered with Michelin-starred or celebrity chefs and restaurants to lend their catering operations credibility and prestige, particularly in higher cabins.
Airline food often has a dire reputation, largely due to the quality of food that is served ‘down the back’. A celebrity chef partnership allows airlines to distinguish their onboard service as well as deepen partnerships with home-grown chefs.
Usually these special dishes feature only on flights departing an airline’s main hub, so it was with pleasant surprise that Singapore Airlines’ latest announcement dropped into our inbox.

From the end of this year, Singapore Airlines will collaborate with Monica Galetti, who you may know as one of the judges on the BBC’s MasterChef: The Professionals as well as the presenter of Amazing Hotels.
Monica will be creating seasonal menus for passengers in premium cabins, including Business Class, First Class and in the A380 suites.
According to Singapore Airlines, “the collection will feature a number of signature dishes from her London restaurant Mere.” Although of Kiwi-Samoan descent, Mere largely serves contemporary British cuisine and the (restaurant) menu includes dishes such as Cornish stonebass, Herdwick lamb and Devon duck.
The dishes will be available on flights departing Heathrow, Gatwick and Manchester and the menus will cover soups, starters, mains and desserts. Unfortunately, I will be too early to try them on the airline’s Gatwick inaugural flight in June as they won’t be available until the fourth quarter.
Whilst I won’t be able to taste Monica’s new menu, I am looking forward to seeing what Singapore Airlines has to offer from the kitchen, so stay tuned.
